Caldo Verde

This creamy, dairy free soup is perfect for those evenings that are starting to get chilly! The ultimate comfort food, each serve contains over 100% of your recommended daily intake of Vitamins A, C & B6, which are essential for healthy skin!

Serves 4

 

Ingredients

  • 6 potatoes, chopped

  • 1 red onion, diced

  • 2 garlic cloves, crushed

  • 3 cups (750ml) vegetable stock

  • 1/4 cup (60ml) olive oil

  • 1 chorizo sausage, diced

  • 500g kale or silverbeet, thinly sliced

  • Salt & pepper, to taste

 

Directions

  1. Place potato, onion, garlic, stock and olive oil in slow cooker and cook on high for 3 hours, or until the potato is tender

  2. Using a handheld blender, puree until smooth. Add chorizo and kale to slow cooker and cook for a further 1 hour on low. Season to taste
