Cauliflower Fried Rice with Veggies

Cauliflower rice is SO EASY to make and goes perfectly with protein such as crispy salmon. Any veggies you like can be added to this dish, it’s a great excuse to use some up that have been sitting in the fridge for a while! This meal is an excellent source of Vitamin C, for protecting against oxidative damage, & Vitamin K, which is essential for normal blood coagulation.

Serves 4 generously as a side dish


  • 1 cauliflower, chopped into chunks

  • 2 tbsp extra-virgin olive oil, plus extra to serve

  • 1 onion, finely diced

  • 1 garlic clove, finely chopped

  • 1 chilli, finely chopped

  • 4 celery stalks, chopped

  • 1 capsicum, diced

  • 1 carrot, finely chopped

  • 1 head broccoli, chopped

  • Handful spinach

  • Salt and pepper


  1. Add cauliflower chunks to food processor and pulse until cauliflower has rice-like texture

  2. Heat olive oil in a large pan over medium heat. Add onion, garlic and chilli and sauté for a few minutes

  3. Add cauliflower and sauté for 5 minutes. Toss through the rest of the veggies and cook for a few minutes

  4. Remove from heat. Season to taste and drizzle with olive oil
