Chicken with Cabbage

This flavorsome, filling and healthy dish is a must try! Using minimal ingredients, this is an easy recipe to whip up on those busy evenings. Each serve contains a whopping 160% of your daily Vitamin K requirements, and is also an excellent source of niacin and selenium. These nutrients assist with blood health, cholesterol lowering and protection from oxidative damage.

Serves 4

Ingredients

  • 3 tbsp olive oil

  • 500g boneless chicken thighs, cut into small pieces

  • 1/2 medium cabbage

  • 1 tbsp paprika

  • 2 tbsp tomato paste

  • 2 medium carrots, grated

  • 1 cup chicken stock

  • Salt and pepper, to taste

  • Hot serve, to serve, optional

  • Parsley, to serve

Directions

  1. Heat olive oil in a large pan over medium-high heat. Add chicken and fry for 5-6 minutes, or until browned

  2. Meanwhile, slice cabbage into thin strips

  3. Add paprika and tomato paste to chicken. Stir and saute for around 5 minutes

  4. Add cabbage to chicken and cook for another 5 minutes

  5. Add grated carrot, chicken stock, salt and pepper, and stir together. Cook without the lid, stirring occasionally, for 30-40 minutes or until there is no liquid remaining. 

  6. Sit in hot sauce, if desired, and garnish with fresh parsley
