CHICKEN WITH GREMOLATA

Low Calorie Chicken thighs with Gremolata, lemon, oregano, thyme and garlic. Delicious served with dark greens. For the gremolata:

Generous handful of flat-leaf parsley, finely chopped

1 tsp extra-virgin olive oil

Zest of a lemon

1 tbsp lemon juice

1 tsp fresh oregano, finely chopped

1 tsp fresh thyme, finely chopped

2 garlic cloves, very finely chopped

Salt and pepper

 

4 chicken thighs, boneless and skinless, or 2 chicken breasts sliced lengthwise

2 tsp butter

Salt and pepper

Dark salad leaves (watercress, rocket, baby spinach) or blanched green beans, to serve

 

In a small bowl, combine all gremolata ingredients.  Stir well and set aside.  Slash the meat several times, season well. Melt butter in hot griddle pan and cook chicken over medium heat until golden, then turn and continue until meat Is cooked through (approx. 5 minutes each side).  Serve drizzles with 1 tbsp gremolata and a side of dark salad leaves.
