Hot Cross Buns
Looking for a guilt-free Easter treat? These gluten and dairy free hot cross buns will be a hit!
Our healthier version has almost 1/3 of the calories of regular store bought buns but still have the same delicious taste.
2.5 cups almond meal
3 tbsp coconut flour
1.5 tsp baking powder
1 tsp sea salt
1.5 tbsp mixed spice
3 tbsp coconut sugar
3 tbsp coconut oil, melted
2 tbsp honey
3 eggs (2 for the mixture, 1 for glazing)
1 tsp vanilla extract
100 dark chocolate, melted
Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper
Combine almond meal, coconut flour, baking powder, sea salt, mixed spice and coconut sugar in a medium bowl. Mix well
Whisk together coconut oil, honey, 2 eggs and vanilla in a jug. Pour wet ingredients into the dry ingredients and mix well
Shape 1/4 cup worth of the mixture into a bun and place on baking tray. Repeat with remaining mixture
Whisk egg and using a pastry brush, brush each bun with a little egg to glaze
Bake in oven for 20 minutes or until lightly golden and cooked through
Remove from oven and leave to cool for 5-10 minutes, before piping a cross on each bun with the melted chocolate (use a snaplock bag and snip off a tiny corner to pipe chocolate).
