Satisfy your sweet tooth while you’re on the keto diet with these mini muffins. At less than 55 calories per serve, they are the perfect treat, packed full of healthy fats.
Makes 14-15 mini muffins
1 cup almond meal
1/2 tbsp baking powder
1/4 tsp salt
1 tsp cinnamon
100g mini dark chocolate chips
1/4 tsp stevia
1/4 cup almond milk, or milk of choice
Preheat oven to 180°C. Use a silicone mini muffin tray, otherwise add mini cupcake cases to a muffin tin.
Combine dry ingredients, then stir in the wet ingredients until mixed well. Scoop into muffin cups, filling about 2/3 of the way up.
Bake for 10 minutes, remove from the oven and let cool for an additional 10 minutes, during which time they should continue to firm up.
