Raw Cinnamon Roll Bites

These little delights are gluten, dairy and sugar free but packed full of festive flavour! They satisfy that sweet craving but are full of good fats and nutrients, such as copper for energy production and iron absorption.

Makes 12-15 bites


Ingredients

Dough

1 cup soaked cashews (soaked at least 4 hours, or overnight)

1/2 cup coconut flour

1/3 cup coconut butter

1/4 cup nut butter of your choice, such as cashew or peanut

2 tbsp coconut oil

2 tbsp cinnamon

1 tbsp vanilla

1/2 tsp sea salt


Cinnamon Coating

2 tbsp cinnamon


Directions

  1. Place cinnamon for coating in a small bowl. Set aside

  2. Add all cookie ingredients to a food processor and mix until a dough forms

  3. Roll dough into 12-15 balls, rolling each into the cinnamon coating. Place on plate in the fridge for about an hour to harden. Enjoy when the bites have firmed up! Store leftovers in the fridge
