Slow Cooker Dairy Free Potato Chowder

This smooth and creamy dairy free potato chowder is perfect for those chilly winter nights. It is an excellent source of Vitamin C, for growth and repair, and Vitamin B6, which is essential for hormone production and regulates mood.

Serves 4-6

Ingredients:

  • ½ cup raw cashews
  • 5-6 medium potatoes, peeled and chopped
  • 1 medium onion, chopped
  • 3 garlic cloves, peeled
  • 1L chicken or vegetable stock
  • 2-3 sprigs thyme, cut roughly
  • 2 tsp ground pepper
  • 2 tbsp nutritional yeast
  • Toppings:
  • Cooked, crumbled bacon
  • Sauerkraut
  • Spring onion

Direction:

  1. Place cashews in a small bowl and cover with water. Leave to soak while chowder cooks
  2. Add potatoes, onion, garlic, stock and thyme to a slow cooker, stirring to combine. Cook on high for 5-6 hours or low for 8-9 hours, or until potatoes and onion are very tender
  3. Drain and rinse cashews. Add cashews, nutritional yeast and ground pepper to the slow cooker, stirring to combine
  4. Blend the soup until smooth and creamy
  5. Ladle into bowls and add toppings
