Spicy Peanut Ramen

Looking for a dish to warm you up? Our spicy vegan peanut ramen is incredibly fast and easy to whip up any night of the week! It is very flavourful and versatile - you can add other vegetables and add any protein you’d like, if you don’t require a vegan meal.

Serves 6

Ingredients

  • 2 tbsp olive oil

  • 3 cloves garlic, chopped

  • 1 tsp ginger, grated

  • 1 small chilli, chopped (optional)

  • 1 tsp green curry paste

  • 4 cups vegetable stock

  • 400ml coconut milk

  • 3 heaped tbsp peanut butter

  • 2 tbsp soy sauce

  • 2 tbsp agave syrup

  • Juice of 2 limes

  • 400g ramen noodles

  • 150g mushrooms, chopped

  • Coriander, to serve

  • Chopped peanuts, to serve

  • Chopped nori sheets, to serve (optional)

Directions

  1. In a large pot, heat oil on medium heat. Add garlic, ginger and chilli, saute for 1-2 minutes

  2. Add curry paste, mix well, and cook for another minute

  3. Add 3 cups of vegetable stock and the coconut milk. Stir to combine and reduce heat to low so the broth is simmering

  4. In a small bowl, whisk together remaining cup of stock and peanut butter until well combined

  5. Add peanut butter mixture to the pot and stir to combine

  6. Add soy sauce, agave and lime juice and simmer on low for 5-10 minutes. Taste and adjust seasonings as required

  7. Add ramen and mushrooms, and cook for another 2-3 minutes

  8. Serve immediately with coriander and chopped peanuts, and nori sheets, if using
