Sweet Potato & Black Bean Tacos

You won’t even miss the meat in these tacos! One serve provides you with a whopping 35g protein and all of your daily fibre requirements.
Serves 4
Ingredients
2 large sweet potatoes, diced
3 tbsp olive oil
3 tsp cumin
1 tsp chilli powder
1 onion, finely diced
3 cloves garlic, minced
2 cans black beans, drained and rinsed
1 lime, juiced, plus extra to serve
8 corn tortillas
1 avocado
1/2 cup coriander
Salt and pepper, to taste
Directions
Preheat oven to 200C. Line a baking tray with baking paper. In a large bowl, combine sweet potato, 2 tbsp olive oil, 1 tsp cumin and chilli powder. Spread sweet potato on baking tray and bake in oven for 45 minutes, or until tender
While sweet potatoes are baking, heat remaining olive oil in a pan. Add onions and garlic, and saute until fragrant, about 5 minutes. Add black beans, remaining cumin and lime juice. When sweet potatoes are cooked, add them to bean mixture and mix until well combined
Warm tortillas in microwave or oven, according to packet instructions
Serve sweet potato mixture in tortillas, top with avocado, coriander and a drop of lime juice, and season to taste.
