Sweet Potato & Lentil Patties

If you’re after an easy but delicious dinner, we’ve got you sorted! These patties are an excellent source of Vitamin A, required for immune function and vision, and are less than 65 calories each! We served ours with a delicious chipotle lime avocado oil mayonnaise, which added some zing, and a crisp salad.

Makes 8 patties


  • 1 large sweet potato, cubed

  • 200g lentils, rinsed and drained

  • 2 tbsp lemon juice

  • 2 tsp smoked paprika

  • 2 tsp cumin

  • Pinch cayenne pepper

  • 2 tbsp flour

  • 2 tbsp fresh coriander, plus more to serve

  • Salt and pepper, to taste


  1. Preheat oven to 180C. Line baking tray with baking paper

  2. Place cubed pumpkin on baking tray, season with salt and pepper, and drizzle with olive oil

  3. Roast pumpkin for 30 minutes, or until tender

  4. Mash pumpkin, then add lentils, lemon juice, spices, flour and coriander. Season and shape into 8 patties

  5. Cook patties in oven for 30 minutes, turning halfway

  6. Serve with fresh coriander and a fresh salad
