Full of omega-3s, this creamy salmon is incredibly easy to make and each serve contains over 30g protein, more than double the recommended intake of Vitamin B12, and your daily serve of Vitamin K!
For the salmon:
1 tbsp olive oil
4 salmon fillets, skin on (about 100-150g each)
1/4 tsp salt
For the sauce:
3 cloves garlic, minced
1/4 cup sun-dried tomatoes, chopped
1 cup artichoke hearts, chopped
2 tbsp capers
2 handfuls of spinach
1 cup cream
1 tsp paprika
Salt, to taste
To sear salmon: heat oil in a large pan on medium-high heat. Season salmon with salt and add to pan skin side up. Sear for 4-5 minutes.
Reduce heat to medium and flip salmon fillets (skin side down). Sear for another 4-5 minutes, then remove from pan
To make sauce: Add garlic, sun-dried tomatoes, artichoke and capers to the same, now empty, pan. Cook, stirring, for 1-2 minutes.
Add spinach and continue to stir until it wilts. Add cream and paprika and bring to a simmer. Stir for 1-2 minutes, season with salt and add more paprika if desired.
Add salmon to the pan with the sauce. Spoon sauce over salmon and simmer for a minute or two, until salmon is warm and cooked through.
Serve with steamed vegetables or a salad.
